My recip's amazingly long list of likes/dislikes is sooooooo long, it's hard to remember and somewhat intimidating

Well, you don't have to include ALL the chocolate chips in your cookie recipe, just remember to leave out the raisins.

My strategy for recips with endless lists of likes and dislikes is to copypaste them somewhere else, then go through the list deleting all the likes I'm not interested in (eh you like time loops but I can't write that so it was not gonna happen anyway), and all the DNWs I was not gonna cross to begin with (eh you don't want high school AU but that was also never gonna happen so we're good).

That leaves me with much shorter lists of likes I can quickly reference if I want to give the fic a little oomph, and DNWs I actually need to keep an eye out for because I may accidentally cross. More manageable than going back through the whole thing again every time I need a quick reminder.

This is what I do with long letters in general. Copy paste into word or a gmail draft. Delete everything in the general section that is irrelevant--DNWs I would never have written anyway, likes I don't share or which wouldn't even be relevant for these characters. I delete teh fandom sections we didn't match on. Then I delete all the blather about the fandom, keeping only the phrases that I like or need to remember as aspects not to include. Then I delete all the prompts that I don't like. I'm usually left with just a few key sentences, and can easily come up with ideas from that.

Same. I'll also bold or highlight stuff I really want to include, and the document doubles as my brainstorming and outline document.

I'm happy to see that I'm not the only abuser of gmail drafts as a writing/official safekeeping place.

You don't need to hit all their likes. Just choose a few that are most likely to fit with your fic idea and keep them in mind. A fic trying to fit too many likes in would probably end up an incoherent monstrosity.
